Can I see Keukenhof and the Zaanse Schans windmills in one day?

Yes, by car, if you start early: the Zaanse Schans lies on the other side of Amsterdam, about 45 km and 41 minutes on a clear road from Keukenhof, so take the 8am arrival time, leave the gardens around 11:30 and you have the afternoon among the windmills before a 22 minutes drive back into the city. Booked by the hour, the whole 9-hour day is €585 in Business Class or €720 in Van Class. By bus and train you would go back through Amsterdam in between.

Is it too much for one day?

For most adults it is a full but easy day, because nobody has to find a train or a parking space. With small children or older travelers, split it: Keukenhof one day, and the Zaanse Schans with Edam and Volendam another, see that day by car. Keukenhof has a historic windmill of its own in the park, if one mill is enough.
